Coconut Crusted Salmon & Bacon Brussels Sprouts

Ingredients

Serves 2-4

  • 1 pound Wild Sockeye Salmon

  • 1-2 Tablespoons Egg Whites

  • 1/3 Cup Shredded Unsweetened Coconut

  • 3 Cups Brussels Sprouts 

  • 6 Strips of Uncured Bacon 

  • Coconut Oil

Directions

1. Pre-heat oven to 375 degrees Fahrenheit.

2. Wash and chop ends of Brussels sprouts then cut in half.

3. Cut strips of bacon into thirds.

Directions (Salmon)

1. Coat the top of the salmon with egg whites.

2. Sprinkle shredded coconut on top of salmon.

3. Heat coconut oil in a pan over medium heat.

4. Place salmon coconut side down and pan-sear for 3 minutes allowing coconut crust to form.

5. Remove salmon and place coconut side up on baking sheet.

6. Bake in the oven for 15 minutes.

Directions (Brussel Sprouts)

1. Heat pan over medium heat on stove top.

2. Add bacon and cover for 3 minutes.

3. Add Brussels sprouts and cover for 15 minutes, stir occasionally.

When I started to follow the paloe style of eating I began to experiment in the kitchen! It was fun to create new recipes that tasted great and made me feel good. Instead of flavoring foods with high fructose syrup marinades, I began to incorporate new spices and healthy fats such as coconut oil to flavor my food. In this recipe, bacon fat is used to flavor the Brussels sprouts and shredded coconut adds texture to the salmon. These flavors are natural, no additives here! When we fuel our bodies properly they can perform at an optimal level which in return makes us energized and happy!
