Paleo Egg Nog

Ingredients

  • 4 egg yolks

  • 2 cans of full fat Organic Coconut Milk

  • 1/4 cup Maple Syrup

  • 1 teaspoon Nutmeg (adjust to taste)

  • ¼ tsp of Cinnamon

  • rum, brandy or bourbon (optional)

Directions

  1. Beat yolks for a couple minutes and gradually add maple syrup. Set aside for now.

  2. In a saucepan, bring the coconut milk to a low simmer and then add cinnamon and nutmeg. Make sure you don’t bring the coconut milk to a boil.

  3. Slowly add a spoonful of the hot milk mixture to the egg yolks and stir. Repeat until you have about a cup of milk in your egg mix. This allows the eggs to be added to the saucepan without hardening.

  4. Add the egg mixture to the saucepan. Heat mixture a few minutes.

  5. Let the egg nog cool a little and then add alcohol.

  6. Serve warm or put into the fridge to cool.

  7. Sprinkle with nutmeg and cinnamon before serving.
