Chopped Kale Salad with Prosciutto & Paleo Ranch Dressing

Ingredients (Raw Vegan Ranch Dressing)

Makes approximately 2 cups

  • 3/4 cup cashew butter

  • 1/2 cup water

  • 1/4 cup apple cider vinegar

  • 2 teaspoon honey

  • 1 to 2 large garlic cloves, minced

  • 1 tablespoon dried dill weed

  • 1/4 teaspoon white or black pepper

Directions (Raw Vegan Ranch Dressing)

  1. Combine all ingredients in a food processor or blender and puree until smooth. Thin to desired consistency with additional water if needed. Season to taste with salt and pepper.

  2. Serve immediately, or store in a glass jar for up to two weeks.

Ingredients (Salad)

Serves 4

  • 2 large bundles of kale

  • 1 cup very small pear or grape tomatoes, or halved cherry tomatoes

  • 2 carrots, julienne or shredded

  • 1 small red onion, very thinly sliced crosswise

  • 4 ounces sliced prosciutto, chopped

  • Vegan Ranch Dressing (see recipe above)

  • 1 tablespoon dried dill weed

  • 1/2 cup Wholly Bites Sweet Curry Clusters for croutons

Directions (Salad)

  1. Remove stems from kale; stack leaves and very thinly sliced crosswise. Combine in a salad bowl with tomatoes, carrots, onion and prosciutto.

  2. Add just enough dressing to salad to lightly coat ingredients; toss to mix. Divide between four serving plates. Sprinkle each with Sweet Curry Clusters, and serve immediately.
